I’m Evi, originally from Brugge, Belgium. Despite my early passion for becoming a chef, my parents encouraged me to pursue a college education in ‘Nutrition and Dietetics.’ After earning my degree, I followed my culinary passion through evening school. Over the past 25 years, I’ve experienced various roles in the restaurant industry, from dishwasher to manager, gaining valuable insights into its dynamics. Having witnessed both challenges and successes, I’m dedicated to enhancing operational efficiency and creating better customer experiences in any restaurant setting.

Mieke Renders, born in Belgium in 1975, is the founder of Raindeer AB, a Swedish company. Passionate about culture and languages, she advocates for the independence of cultural operators and their ability to self-organize for greater impact. Formerly the general manager of the Flemish Cultural Center ‘De Brakke Grond’ in Amsterdam and a cultural attaché in New York, Mieke has a background in physical anthropology and arts management. Initially in the museum and cultural heritage field, she later transitioned to connecting heritage with performing and visual arts. With a strong networking passion, Mieke served as the managing director of Trans Europe Halles. In December 2020, she co-founded Raindeer AB, focusing on innovative concepts in the countryside, blending food, innovation, and circular economy. Through ventures like the Not Quite Café/Bistro and repurposed Old Paper Mill in Fengersfors, they collaborate extensively with local producers. Today, Mieke is a coach, facilitator, and consultant.
